Apple Spice Cake

Bake this yummy cake to have on hand for friends and family to enjoy.


125g butter
175g brown sugar
2 eggs, beaten
225g self raising wholemeal flour
1 tsp mixed spice
1 tsp cinnamon
2 tsp baking powder
450g  finely chopped apple (about 3-4 large granny smiths)
3 -4 tbsp milk

1 tbsp honey
1 tbsp brown sugar


  • Pre-heat oven to 180C
  • Grease and line a deep 18 cm round cake tin
  • Cream butter and sugar together until pale and fluffy
  • Add eggs, a little at time, beating well after each addition
  • Add flour, spices and baking powder to the butter mixture and mix well
  • Fold in apples and milk until you get a soft dropping consistency
  • Bake in the oven for about 1 ½ hours or until well risen and firm to the touch.
  • When cold, brush with honey and sprinkle with sugar.
  • Serve warm or cold with Greek yoghurt
