This delicious treat was brought out at afternoon teas and birthday parties all through my childhood (and yes, it does still make the occasional appearance!). It’s a great recipe for kids to help with as it requires no cooking and is great fun to mix with little hands. Just beware the clean-up afterwards!
Although my siblings and I would happily have eaten this slice every day, Mum was smart enough to make it a special occasion food in an effort to teach us healthy eating habits – it’s only now I can say just how glad I am for that sensibility…
Ingredients:
1 x 250g packet plain sweet biscuits, crushed/broken up using pulse button on food processer (Milk Arrowroots were the standard for us)
200g marshmallows, chopped (you can use the tiny marshmallows, but beware, they will be much harder to get the rest of the mixture to stick to)
200g diced dried apricots (the opposite of the marshmallows here – the pre-chopped ones work best)
1 cup chopped mixed nuts (the weight will depend on what nuts you prefer)
1 x 400g tin condensed milk
½ cup desiccated coconut
Method:
Mix all ingredients except coconut in a large bowl until they come together in a sticky mass (best done with your hands).
Spread the coconut on a clean bench or a board. Shape half of the mixture into a log about 4cm in diameter. Roll in coconut to coat, then repeat with the other half of mixture.
Wrap both logs separately in foil and store in the freezer. Remove from freezer about 15 minutes before serving, and serve cut into thin slices.
If you can manage to keep it that long, the slice will last about 3 months in the freezer if well wrapped.
