600g lean beef or lamb mince
1 small onion, grated
2 cloves garlic, crushed
1 egg, lightly beaten
1/3 cup dried breadcrumbs
3 tsp lemon zest, grated
1 tbsp olive oil
20 cherry tomatoes
400g dried pasta
2 bunches broccolini, cut into bite-sized pieces
2 tbsp olive oil
¼ cup lemon juice
Ground pepper to taste
Tip: You can use any green vegetable if you can’t find broccolini.
