Barbequed Ham Summer Salad

This is a simple and delicious recipe to use up any leftover Christmas ham.


Serves 4


4 Nectarines or Peaches, halved
300g Leg Ham, sliced thickly
1 Red Capsicum , thickly sliced
1 bunch Asparagus, trimmed
Olive oil for brushing
150g Rocket salad leaves
16 or so grape tomatoes, halved
½ cup Balsamic dressing to serve
Relish or chutney to serve



  1. Pre-heat BBQ or large griddle pan over a medium heat
  2. Brush the surface of the nectarines, ham, capsicum and asparagus with a little oil.
  3. Barbeque the nectarines, ham, capsicum and asparagus approximately 3 minutes each side.
  4. Toss the rocket leaves and tomatoes together in a large bowl with the balsamic dressing.
  5. Divide the salad evenly amongst 4 serving bowls and arrange the nectarines, ham, capsicum and asparagus decoratively over the salad .
  6. Serve straight away with crusty bread and garnish with a dollop of a chunky relish or chutney.
