Carrot Cake

A popular choice for a morning tea. Omit the nuts for a school lunchbox treat.


3 eggs
1 cup sugar
1 1/3 cup plain flour
1 1/3 tsp baking powder
1 1/3 tsp bicarb soda
2 tsp cinnamon
1 cup olive oil (or less)
2 cups grated carrot
1 cup crushed nuts (eg: walnuts)
1 tsp vanilla essence


250g icing sugar
125g cream cheese (soft)
3 tbl soft butter
1 tsp vanilla essence


  • Beat eggs and sugar until frothy.
  • Add sifted flour, baking powder, bicarb soda and cinnamon.
  • Add oil and mix well.
  • Add grated carrot, nuts and vanilla essence.
  • Butter a baking tin and bake in a moderate oven for 1 hour.
