Chickpea + Ricotta Salad

Perfect to take to a summer barbeque with friends. Add the dressing once you arrive, just before serving.

serves 4


1 cucumber,thickly sliced 
1 small red onion, finely sliced 
150g ricotta, crumbled or cubed 
16 or so sundried tomatoes, sliced 
400g can of chickpeas, drained and rinsed 
pitted black olives, about 16 
Mixed green leaves

For the dressing:

75ml ml extra virgin oil 
1 tsp cayenne pepper 
2 tbsp ground cumin 
1 tbsp tomato puree 
Juice of 2 limes


  • Toss cucumber, onion, tomatoes, chickpeas, olives and cheese together in a bowl.
  • Mix the dressing ingredients together in a jar 
  • Line salad bowls with mixed leaves and pile chickpea salad on top.
  • Sprinkle with the dressing.
  • Serve with wholemeal pitta.
