Classic Banana Cake

This cake is an ideal way to use up bananas that are past their prime.

Ingredients


4 eggs
1 ½ cups sugar
175ml extra light or pure olive oil
100ml milk
1 ¼ cups mashed ripe bananas (about 3)
2 cups self raising flour

Method

  • Preheat oven to 180C/160C fan-forced
  • Grease and line pans with baking paper or grease and flour muffin pans
  • Using an electric mixer, beat eggs and sugar in mixing bowl until thick and fluffy
  • Add oil and milk and beat to combine
  • Stir in bananas
  • Fold in flour
  • Pour into prepared pans and bake as directed
  • Cool on wire racks

Suitable to freeze

Makes:

  • 2 x 20cm (1.5L) ring pans, baked for 45-50 minutes.
  • 20-40 x ½ cup muffins, baked for 20-25 minutes
  • 2 standard loaf tins or 2 deeps 20cm round pans, baked for 50 minutes

 

Vary this recipe with these flavourings:

  • 1 tsp vanilla essence or ground cinnamon
  • 1-2 tbsp lemon juice
  • ½ cup dark chocolate chips
  • 1/3 cup coconut
