Coconut Flour Pancakes

Paleo friendly delicious pancakes

Preparation: 5 minutes

Cooking: 10 minutes

Serves 4


1 cup coconut flour (Thermomix: process a cup of dessicated or flaked coconut for 8-10 sec Speed 8)
1 egg
1/2-3/4 cup milk (almond milk can be used if preferred)
1 tsp vanilla essence or the freshly scraped beans of half a vanilla pod
1/2 tsp baking powder
decent pinch of salt
sprinkle of cinnamon


  • Combine all ingredients and stir until combined. (Thermomix: 8-10 secs Speed 6). Mixture will be thicker than traditional pancake mixture.
  • Heat a frypan over medium heat and if pan is nonstick, melt a tiny bit of butter and swirl to cover pan. Be careful not to have pan too hot.
  • Using a spoon, put mixture on pan and pat down to desired thickness. Small, approx 1-2 tbsps, are easier to keep their shape when turning over.
  • Cook until golden on each side, this takes up to 5 minutes depending on type of pan. A metal spatula is more effective than plastic when flipping in keeping the pancakes' shape.
  • Transfer to a warm plate and repeat with remaining mixture.
  • Enjoy with preferred toppings or as they are.
