Gazpacho Soup

This is an appetising and refreshing soup for those warmer days.

Serves 4

Ingredients

750g tomatoes, skinned

1 Lebanese cucumber, finely chopped
1 green capsicum, chopped
3 cloves garlic, crushed
2 tbsp chopped olives
80ml red wine vinegar
60ml olive oil
1 tbsp tomato paste

Method

  • Mix together tomato, cucumber, capsicum, garlic, olives, vinegar, oil and tomato paste  Season with pepper
  • Cover and refrigerate for 2-3 hours
  • Add 1-2 cups of chilled water to thin to your liking
  • Serve
