Italian Baked Fish

This dish makes a good, healthy meal.

serves 4


4 pieces thick white fish 
2 tbsp olive oil
1 medium red onion, chopped
1 clove garlic, crushed
400g tin chopped tomatoes
Freshly ground pepper
110g mushrooms, thinly chopped
2 tbsp fresh basil, chopped
1 tbsp capers, chopped
Rind and juice of a lime
12 pitted black olives


  • Preheat oven to 190oC
  • Heat the oil in a pan, fry onion for 5 minutes.  
  • Add garlic, tomatoes and pepper, bring to simmering point, cook gently for 15 minutes, uncovered.
  • Add mushrooms; simmer for a further 10 minutes until the sauce is thick.
  • Stir in basil and chopped capers and olives.
  • Place fish on baking dish, season with pepper and sprinkle rind and lime juice on each piece.
  • Spoon equal quantities of the tomato sauce on each piece of fish and cover dish with foil.
  • Bake for 25 minutes depending on thickness of fish.
