Lemon Chicken Kebabs

Perfect for a casual meal. Quick and easy to prepare.


Serves 4


4 boneless chicken thighs – about 450g weight
2 tbsp olive oil
Juice and rind of 1 small lemon
1 tbsp brown sugar
1 tsp cumin
2 cloves garlic, crushed
Freshly ground pepper
1 small red onion, peeled and quartered
125g zucchini, sliced
12 cherry tomatoes
8 sun dried tomatoes


  • Cut chicken into 2 cm cubes
  • Thread onto 4 wooden skewers and place on a foil lined grill pan or on the bbq
  • Whisk together the olive oil, lemon rind and juice, sugar, garlic and cumin. Season with pepper and brush half over the chicken
  • Divide the chopped onion, zucchini, cherry tomatoes and sun dried tomatoes between 4 wooden skewers. Brush with the remaining lemon and cumin dressing
  • Cook chicken kebabs for 2-3 minutes then add vegetable kebabs and cook for a further 5–6 minutes or until cooked
