4 lean pork rump or leg steaks, thick cut
juice and rind of 1 lemon
1 tbs oil
1 tbs Dijon or wholegrain mustard
salt and pepper as desired
Apple sauce to serve
Don’t overdo the cooking - it’s OK to cook pork on medium for just a few minutes each side.
