Marmalade Bread

This bread is so easy to do and you can use any type of jam or marmalade or even lemon curd – simply delicious.

Serves 4


200g flour
5ml ground ginger
5ml baking powder
50g soft brown sugar
50g butter
60ml marmalade
1 egg
3 tbsp milk
25g candied peel or sliced oranges


• Pre-heat oven to 170°C
• Grease and line a loaf tin
• Sift flour, ginger, baking powder into a bowl and then add the sugar
• Rub in butter
• In a separate bowl mix the marmalade or jam with the egg and milk
• Add this to the dry ingredients
• Mix to a dough, adding more milk if needed
• Pour into prepared loaf tin and press candied peel on top
• Bake for 1 1/4 hours
• Serve warm or cold.
