Potato + Spinach Parcels

Serves 6 people


  • 1 tbsp pine nuts
  • 250g packet frozen spinach, thawed
  • 250g fetta cheese, grated
  • 600g (4 medium) potatoes, cooked and cubed
  • 1/4 cup grated parmesan cheese
  • Freshly ground pepper
  • Pinch ground nutmeg
  • 12 sheets filo pastry
  • 1/4 cup yoghurt
  • 1 tbsp vegetable oil



  1. Place pine nuts in saucepan. Stir over low heat until golden brown. Remove from heat immediately. Chop pine nuts roughly.
  2. In a bowl combine spinach, pine nuts, fetta and cheddar cheeses, potatoes, parmesan cheese, pepper and nutmeg.
  3. Brush a sheet of filo pastry lightly with yoghurt, top with another sheet of filo, brush with yoghurt. Fold in half crossways.
  4. Place one portion of the spinach and potato mixture in the centre and gently roll up.
  5. Place on greased oven tray, brush top with oil. Repeat with remaining pastry and remaining potato and spinach mixture.
  6. Bake in preheated 200 degree oven for 20 minutes or until golden brown.
