Roast Pumpkin Loaf

A delicious and healthy cake.

Makes 10 Slices


250g pumpkin, chopped into cubes
140ml olive oil
200g brown sugar
2 eggs
1 tsp vanilla extract
2 tbsp ground cinnamon
1 tsp baking powder
1 tsp bicarbonate of soda
130g wholemeal flour
130g plain flour, sifted
60g pumpkin seeds


  • Preheat oven to 200ºC/400ºF/gas 6
  • Place pumpkin cubes on a baking sheet and roast for 30 minutes or until tenderand caramelised
  • Cool and mash
  • Line the base of a loaf tin with baking paper
  • In a bowl beat oil and sugar together, then add eggs and beat until thick
  • Add in mashed pumpkin, vanilla, cinnamon and all dry ingredients including pumpkin seeds
  • Pour into loaf tin
  • Bake for 30 minutes or until cooked through.
