Microwave Peach and Port Conserve

YOU WILL NEED: 1 large microwave bowl- NOT plastic; microwave safe plate or Gladwrap to cover; plate in freezer or fridge to test for setting; sterilised jars and clean lids

Ingredients:

  • 1kg freestone peaches- firm and ripe but not over-ripe
  • 200ml fresh lemon juice
  • 700 grams sugar
  • 125ml good quality port

 

Method:

  1. Cut peachers to the pip around the circumference starting at the natural crease at the top. Place in a bowl or sink and blanch by covering with boiling water. When water cools enough to handle fruit, twist peaches in half, take out pips and slip skins off. Cut and dice peaches and place in large, microwave safe bowl with the lemon juice.
  2. Cover and cook in the Microwave on high for approximately 20 minutes or until furit is soft but retaining its shape. Remove cover carefully, avoiding steam, and slowly add the sugar, stirring gently but constantly until dissolved. Replace in microwave without cover, cook another 10 minutes and then stir again to ensure that all the sugar is dissolved. Place back in the microwave without cover and cook in high for approximately 20 minutes. Add the port and cook another 5 minutes. 
  3. Take plate from freezer/fridge and place a small amount of mixture on it. Put back in freezer/fridge for 5 minutes while continuing to cook your conserve. After 5 minutes, remove and check for setting point. Conserve is ready if the surface wrinkles when pushed with your finger or if you run your finger through the conserve it should leave a clear track on the plate. Continue testing and cooking at five minute intervals until you're satisfied with the consistency. The time will depend on the ripeness of the fruit and the size of your microwave.
  4. When finished, pour into sterilised jars and seal immediately. This will ensure an airtight seal as the conserve cools down. Do not leave a big gap between lid and conserve.
