Perfect Scrambled Eggs

The secret is out!


1 tbsp butter
4 eggs
150 ml cream

100g smoked salmon, chopped
2 tbsp chopped herbs - dill, chives and/or parsley
Pinch sea salt
Pinch ground black pepper


  • Melt the butter in a medium fry pan, then pour in the eggs and cream, lightly beaten together. Don’t stir immediately, rather wait until the eggs start to set.
  • Sprinkle the salmon and herbs evenly over the eggs, and the salt and pepper then gently push the egg mix towards the centre of the pan from the edges. The eggs will keep cooking on the plate, so there’s no need to cook them completely in the pan.
  • Bring the mixture in slowly from the edges of the pan to the centre circling the pan. Don't stir or mix, gently works best.
  • When the eggs are mostly set they are ready to serve and best eaten immediately.
