Spinach and Seafood Pasties

A little bit of time is required to prepare these but the final product is well worth it!

Serves 4

Ingredients

500g white fish, boned
2 eggs, hard boiled and chopped
1 tbsp olive oil
350g frozen spinach, thawed
2 tbsp lemon juice
nutmeg
1 tbsp butter
15g plain flour
150ml milk
pepper
125g prawns (or you could use sweetcorn here instead)
Large handful of chopped parsley and dill
370g packet puff pastry
Beaten egg to glaze

Method

  • Place spinach in pan and cook over high heat, stirring until all excess moisture has evaporated
  • Remove from heat and stir in lemon juice and nutmeg
  • Melt butter in pan, add flour and milk and stir continuously to make a sauce, cook for 2 minutes
  • Season, add in chopped eggs, prawns (or sweetcorn) and herbs.
  • Divide pastry into 4 pieces and roll out to large square about 20cms
  • Place a quarter of the fish onto each square at one end, top with spinach followed by prawn sauce
  • Brush pastry edges with beaten egg and fold pastry over fish to enclose totally.
  • Score pastry and place on baking sheet, glaze with more beaten egg.
  • Bake at 220°C for 25 minutes
