Amazing Banana Cake

This recipe was provided to Flourish from the ladies of Kondin, Western Australia


4 eggs
1 ½ cups sugar
175ml extra light or pure olive oil
100ml milk
1 ¼ cups mashed ripe bananas (about 3)
2 cups self raising flour


  • Preheat oven to 180C/160C fan forced.
  • Grease and line pans with baking paper or grease and flour muffin pans.
  • Using an electric mixer, beat eggs and sugar in mixing bowl until thick and fluffy.
  • Add oil and milk and beat to combine.
  • Stir in bananas and fold in flour.
  • Pour into prepared pans/tins and bake as directed below, or until a skewer comes out clean.
  • Cool on wire racks.


  1. Makes 2 x 20cm (1.5L) ring pans, baked for 45-50 minutes.
  2. 20-40 x ½ cup muffins, baked for 20-25 minutes.
  3. 2 standard loaf tins or 2 deeps 20cm round pans, baked for 50 minutes.
  4. Suitable to freeze
  5. Can vary this recipe with these flavourings – 1 tsp vanilla essence or ground cinnamon, 1-2 tbsp lemon juice, ½ cup dark chocolate chips or 1/3 cup coconut.
